Instructions

  • 1. Separate eggs {Tip: keep the yolks resting in the shell} putting whites in 1 large bowl.
  • 2. Whip whites until stiff peaks form.
  • 3. Fold in cheese/chives/seasoning/bacon.
  • 4. Spoon into mounds on parchment-lined baking sheet, make a deep well in centre of each.
  • 5. Bake 220deg cel for 3 minutes,
  • 6. Add 1 yolk to each well.
  • 7. Season with salt & pepper if you wish.
  • 8. Bake until yolks are just set, 2 to 3 minutes.
